The Dolcetto d’Alba DOC Vigna Sorì Rocca is made with grapes only from the Dolcetto vineyards shown on map page no. 17, in 319, 316 P, 317 P, 315 P, 432 P, 214 P, 215 P, in the cru of “Sorì Rocca”. The vineyard has a particularly good exposure (east/south east, steep and airy) and from these grapes a wine that is a full expression of the territory is made.
Vinification: During the ripening of the grapes we thin out the bunches to optimize the yield and then hand-select them before they undergo soft crushing. Selected yeast that respect the fragrant aroma of the wine is added to the must. At the end of temperature-controlled fermentation, the wine is drawn off and racked. The malolactic fermentation is completed in steel. The wine is then cold stabilized and prepared for bottle refinement.
Visual aspects: Bright ruby red with obvious violet highlights.
Olfactory aspects: Intense, persistent, fresh, fruity (berries, cherry).
Taste aspects: Dry, warm, balanced, of notable structure: perceivable tannins as is correct for this variety, with a slightly dry almond finish, pleasant to drink.
Serving temperature: 61/65° F - 16/18° C.
Aging/Method of storage: At least 5/6 years if stored correctly, far from light in a dry and constant temperature, in the same horizontal position as when it arrives in its case until the moment of consumption.
