The Nebbiolo d’Alba DOC Vigna Sorì Ornati is made exclusively with grapes coming from the Nebbiolo vineyard shown on map page no, 17, 216 P, in the cru “Ornati”. Excellently exposed vineyard, (south/south-west) on the steep and airy hill overhanging the wine cellar of the estate.
Vinification: During the ripening of the grapes we thin out the bunches to optimize the yield and then hand-select them before they undergo soft crushing. Selected yeast that respect the fragrant aroma of the wine is added to the must. At the end of temperature-controlled fermentation, the wine is drawn off and racked. The wine is then placed in Slavonian oak casks where it is finished and matured for at least a year. The wine is finally ready for bottling and refinement in bottle.
Visual aspects: Brilliant, garnet red of good intensity.
Olfactory aspects: Ethereal, intense, floral (violet), fruity (plum and raspberry). Subsequently emerging spicy note.
Taste aspects: Dry, warm, fullbodied, suitably tannic, soft and balanced, of notable freshness and character.
Serving temperature: 61/65° F - 16/18° C.
Longevity/Method of storage: At least 10/12 years if stored correctly, far from light in a dry and constant temperature, in the same horizontal position as when it arrives in its case until the moment of consumption.
